How to prepare: The fish is thawed, cleaned, decapitated, gutted, washed, threaded (deboned), with a kitchen knife, along the length of the spine, then cut into small pieces. The resulting bones are boiled in a bowl with cold water (1 l) and salt, obtaining a soup that is strained and cooled. The white bread is soaked in 300 ml of fish bone soup. The bacon is cut into pieces. Peel an onion, wash it, cut it into slices and simmer in 25 ml of oil and 100 ml of fish soup. How to prepare: Wash the fish, drizzle, cut into pieces and mix with lemon juice and grated peel. Slices of bread - without crust - cut into cubes and soak in whipped cream or sour cream. Peel an onion, finely chop and cook in hot oil until glassy. The fish is allowed to drain a little and is crushed in the food processor. Mix the fish puree and hardened onion with the soaked bread, add the egg, salt and pepper and knead well.

Curățăm peștele de piele și îl spălăm bine cu apă rece, apoi tăiem peștele în fâșii mai lungi și îi scoatem oasele pe cât de bine putem (în special pe cele mari).Îl băgăm la mașina de tocat.În vasul de la blender punem năutul, usturoiul, ceapa, pătrunjelul, mărarul și le tocăm cât mai mici.După ce le-am tocat cu ajutorul blender-ului, punem compoziția formată pe un tocător, iar cu ajutorul unui cuțit o mărunțim bine (nu trebuie să rămână bucăți mari).Într-un castron încăpător punem peștele tocat, compoziția făcută la blender, 1 ou (celălalt îl păstrăm pentru mai târziu), sarea și piperul și le amestecăm bine.Din pasta obținută formăm niște biluțe mici și le așezăm pe un tocător sau pe o farfurie întinsă.Într-o farfurie întinsă punem pesmet. Trecem pe rând biluțele prin pesmet, apoi prin ou și din nou prin pesmet.Într-o tigaie încingem ulei și punem chifteluțele la prăjit. Când încep să se prăjească le întoarcem și pe partea cealaltă.După ce s-au prăjit le scoatem pe o farfurie unde punem un șervețel pentru a absorbi surplusul de ulei.Stoarcem zeamă de lămâie peste ele. Le putem servi cu orez, salată, cartofi wedges, sos de iaurt cu usturoi și lime etc.

Intr-un bol, amesteca pestele maruntit cu ceapa tocata marunt, usturoiul pisat, patrunjel, chimen, coriandru si ghimbir.

Adauga faina integrala si oul si amesteca in continuare pana se omogenizeaza. Umezeste-ti mainile si formeaza chiftelute plate de un deget grosime din amestecul de peste. Aseaza-le pe o hartie pergament. Din compozitita pregatita ar trebui sa obtii 20 de chiftelute.

Incinge uleiul intr-o tigaie adanca si prajeste chiftelutele la foc mediu timp de 3 minute pe fiecare parte. In final ar trebui sa fie aurii si usor de taiat chiar si cu o furculita.

Lasa-le sa se scurga pe servetele de hartie, astfel incat uleiul in exces sa fie absorbit. Pune-le in frigider pana cand se racesc bine.

Servete chiftelutele de peste cu sos Aioli cu lamaie si ardei iute.
